Sautee veggies in oil until tender. Remove veggies and allow to cool. Beat eggs in bowl, add salt and pepper add cool veggies to eggs and mix well. Lightly prick side of pie crust with fork.

Instructions to make Veggie Quiche:
  1. In a bowl combine : mixed veggies, onion, parsley flakes, garlic powder, black pepper and salt, mix well…..
  2. In a separate bowl combine : Bisquick, shredded cheddar cheese, milk and eggs, mix all well……
  3. Combine veggie mix with Bisquick mix, stir well and pour into a 9 inch pie plate that has been sprayed with cooking spray…..
  4. Bake in a 400 degree oven for 35-40 minutes, or until golden on top…..Let rest for 10 minutes before cutting…….
  5. Serve and enjoy 😉!!!!

Freeze option: Cover and freeze unbaked quiche. Place quiche on a baking sheet; cover edges loosely with foil. Bake as directed, increasing time as necessary for a knife inserted in the center to come out clean. This quiche is all about the transformation of humble ingredients into a beautiful meal.
