I love making crustless quich e for weekend brunches. They are so simple to make. Plus, since there's no crust, not only is it healthier, but it's also quicker to prepare. You can mix all the ingredients the night before so it's ready to bake when you wake up.

Steps to make Quiche (w/out crust):
  1. Bake Bacon at 350 for about 10min. Flip over and cook for an additional 5min. Checking periodically, cook until crispy.. Make sure not to burn. Chop into small pieces.
  2. Beat 5 eggs.
  3. Mix Cheese and flour in a separate bowl.
  4. Mix Eggs, Half & Half, Salt, Pepper, 1 1/2 cups of Floured Cheese and Bacon in a bowl.
  5. Spray Pie Pan with oil. Pour in Mixture.
  6. Bake @ 350 for 40min.
  7. Take out and sprinkle the 1/2 Cup of Cheese and Bacon on top of the Quiche and put back into the oven for another 5min. Stick a toothpick inside and if it comes out clean it's ready! Set aside for a few minutes to cool down!
  8. Enjoy!!

This particular quiche is made with ham (so no pre-cooking!), mushrooms, and the most amazing caramelized onions. If you're lucky there's a kind of magic thin crust on the bottom of your quiche. Sometimes, when I'm feeling especially lazy or short on time, I don't pre-cook any of the veggies. I just add finely chopped onions, peppers.
